Cardoons can be grown like Artichokes. They get small artichoke buds – but it is the leaf stalks that are eaten in a variety of ways in Italy.

Gobbo di Nizza is a rare heirloom cardoon from Italy. It gets broad white stalks – perfect for any traditional recipe or even can be eaten raw, dipped in a lovely olive oil.

Needs full sun – gets over 6 feet tall!
